Why This Recipe Works:
This recipe is your front-line defence against cellular damage. Mixed berries are rich in Vitamin C and antioxidants. Walnuts are unique for their high concentration of polyphenol antioxidants and Omega-3s. Kale is a nutrient-dense green, and ginger adds a powerful anti-inflammatory kick
Ingredients:
1 cup (240ml) low-fat kefir or milk
1 cup (150g) frozen mixed berries
1 large handful of kale (stems removed)
1/4 cup (30g) raw walnuts (softer than almonds, most blenders can handle them. Toast them first to enhance the flavour)
1 small piece of fresh ginger (about 1cm), peeled (or ginger puree)
1 tsp raw honey
Instructions:
Combine all ingredients in a blender.
Blend on high until smooth and creamy.
Serve immediately.
Serving Suggestions:
- Its a smoothie. Drink it
- Or put it in a bowl and have it as a smoothie bowl with some chopped nuts or seeds on top
- Try to vary it up each day and aim for as much variety as you can
